Instructions
- Place the pork shoulder, onion slices, minced garlic, diced tomatoes, Italian seasoning, and a pinch of salt and pepper in a slow cooker.
- Cook on low for 6-8 hours.
- Shred the pork in the pot using two forks.
- Add the dried gnocchi and heavy cream to the pot and stir.
- Let it simmer for an additional 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Serve with freshly grated cheese and garnish with parsley.
