Ingredients

  • ½ cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup or honey
  • 2 teaspoons finely grated fresh ginger
  • ½ teaspoon fine sea salt
  • 20 twists freshly ground black pepper

Instructions

  1. In a jar or small bowl, whisk together all of the ingredients until fully blended.
  2. Taste the dressing and adjust the flavors as necessary, adding more vinegar for tartness or maple syrup for sweetness.
  3. Store the dressing in the refrigerator for up to 10 days, and let it warm to room temperature if the olive oil solidifies.
