Small-batch Monster Cookie Bars

Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper.
- In a bowl, mix the softened butter, peanut butter, granulated sugar, and brown sugar until well combined.
- Add the egg and vanilla, mixing until fully incorporated.
- Stir in the oats and sprinkle the baking soda on top, mixing until combined.
- Fold in the M&M’s and chocolate chips.
- Transfer the mixture to the prepared pan and press it into an even layer, adding extra M&M’s on top if desired.
- Bake for 15 to 18 minutes until the edges are lightly browned, but do not overbake.
- Allow the bars to cool in the pan for about 45 minutes before slicing.
