Instructions
- Preheat the oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugars until smooth, then add the peanut butter, egg, and vanilla, mixing well.
- Gradually incorporate the baking soda, flour, and salt, mixing until just combined.
- Fold in the quick oats, M&Ms, and chocolate chips until evenly distributed.
- Roll the dough into balls about 2 tablespoons each and place them on the baking sheet, optionally pressing extra M&Ms on top.
- Bake for 11-13 minutes, until the cookies look slightly soft, then press them down gently with a spoon.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack.
