Ingredients

The cookie base

  • ½ cup salted butter, softened to room temperature
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ¾ cup creamy peanut butter
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • 1 ¼ cups all-purpose flour (spooned & leveled)
  • ¼ teaspoon salt
  • ½ cup quick oats

The mix-ins

  • ¾ cup M&Ms (any size or variety)
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugars until smooth, then add the peanut butter, egg, and vanilla, mixing well.
  3. Gradually incorporate the baking soda, flour, and salt, mixing until just combined.
  4. Fold in the quick oats, M&Ms, and chocolate chips until evenly distributed.
  5. Roll the dough into balls about 2 tablespoons each and place them on the baking sheet, optionally pressing extra M&Ms on top.
  6. Bake for 11-13 minutes, until the cookies look slightly soft, then press them down gently with a spoon.
  7. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack.
