Instructions
- Preheat the broiler.
- In a saucepan, boil salted water and add the rice, then simmer until tender.
- Remove from heat, add shredded carrots on top, cover, and let stand for 8 minutes.
- In a bowl, combine panko, turkey, cilantro, soy sauce, sriracha, egg, sugar, garlic, salt, and pepper, then mix and form into meatballs.
- Place meatballs on a baking sheet, coat with cooking spray, and broil until cooked through.
- Mix honey, soy sauce, and garlic for the sauce, drizzle over meatballs, and toss to combine.
- Serve meatballs with rice, lime wedges, and optional garnishes.
