Ingredients

The cauliflower bites

  • 2 heads cauliflower
  • 3 large eggs
  • 1 ¼ cups panko bread crumbs
  • ½ cup grated parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ cup sriracha
  • ¼ cup hot sauce
  • 6 tablespoons butter
  • 1 teaspoon low-sodium soy sauce or fish sauce

The blue cheese sauce

  • ½ cup plain greek yogurt
  • cup blue cheese
  • 1 tablespoon fresh lemon juice
  • teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • ¼ cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In one bowl, beat the eggs. In another bowl, mix the bread crumbs, parmesan, paprika, salt, and pepper.
  3. Dip each cauliflower floret in the egg, then dredge in the bread crumb mixture, ensuring they are fully coated.
  4. Place the coated florets on the prepared baking sheet and bake for 25 minutes, flipping halfway through.
  5. While the cauliflower is baking, whisk together the sriracha, hot sauce, melted butter, and soy sauce until smooth.
  6. After baking, toss the cauliflower in the sriracha buffalo sauce and return to the baking sheet for another 5 minutes.
  7. Transfer to a serving plate, garnish with cilantro, and serve with the blue cheese sauce.
  8. For the blue cheese sauce, mix yogurt, blue cheese, lemon juice, garlic powder, salt, and pepper in a bowl.
