Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In one bowl, beat the eggs. In another bowl, mix the bread crumbs, parmesan, paprika, salt, and pepper.
- Dip each cauliflower floret in the egg, then dredge in the bread crumb mixture, ensuring they are fully coated.
- Place the coated florets on the prepared baking sheet and bake for 25 minutes, flipping halfway through.
- While the cauliflower is baking, whisk together the sriracha, hot sauce, melted butter, and soy sauce until smooth.
- After baking, toss the cauliflower in the sriracha buffalo sauce and return to the baking sheet for another 5 minutes.
- Transfer to a serving plate, garnish with cilantro, and serve with the blue cheese sauce.
- For the blue cheese sauce, mix yogurt, blue cheese, lemon juice, garlic powder, salt, and pepper in a bowl.
