Ingredients

Doughnuts

  • 2 tablespoons plus 1 teaspoon active dry yeast
  • 1 cup warm milk
  • cups bread flour
  • 1 teaspoon pure vanilla extract

  • 2 tablespoons granulated sugar
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • to taste unit canola oil for frying
  • to taste unit sugar for rolling

Cream

  • 2 cups milk
  • 1 vanilla bean split
  • ½ cup granulated sugar
  • 6 large egg yolks
  • ½ cup flour
  • ¼ teaspoon salt
  • 1 cup heavy cream

Hot Chocolate

  • 8 ounces bittersweet or semi-sweet chocolate
  • ¾ cup milk
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons Cabernet wine
  • a pinch unit salt

Instructions

  1. Combine yeast with warm milk and flour, let it rest.
  2. Mix in remaining yeast, milk, flour, vanilla, and egg yolks until smooth.
  3. Add sugar, salt, and butter, then knead the dough until smooth.
  4. Let the dough rise in a warm place for 1 hour.
  5. Prepare the cream by heating milk with a vanilla bean, then whisk egg yolks and sugar, and combine with the milk.
  6. Cook the cream mixture until thick, strain, and cool in the fridge.
  7. Whip heavy cream and fold into the cooled vanilla cream.
  8. Roll out the dough, cut into squares, and shape into balls.
  9. Let the doughnuts proof for 20-30 minutes.
  10. Heat oil and fry the doughnuts until golden brown.
  11. Prepare hot chocolate sauce by warming milk and cream, adding chocolate, and mixing in wine and butter.
  12. Fill each doughnut with cream and serve with hot chocolate sauce.
