Ingredients

For The Keto Bread

  • 6 tbsp Unsalted butter
  • 4 large Eggs
  • ¾ cup Unsweetened almond milk
  • 1 package Wholesome Yum Keto Bread Mix

For The Keto Bread Pudding

  • 2 ½ cups Heavy cream
  • 3 large Eggs
  • cup Besti Monk Fruit Allulose Blend
  • ¼ cup Unsalted butter (melted)
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • ½ cup Sugar-free dried cranberries (optional)

Instructions

  1. Make the keto bread according to the package instructions and let it dry for 1-2 days.
  2. Preheat the oven to 350°F (177°C).
  3. Cut the dried bread into 1-inch cubes and place them in an 8x8 inch baking dish.
  4. In a medium bowl, whisk together the heavy cream, eggs, Besti, melted butter, vanilla, and cinnamon.
  5. Pour the egg mixture over the bread cubes and stir lightly to coat.
  6. Fold in the sugar-free dried cranberries, if using.
  7. Bake for 35-40 minutes until lightly browned.
