Candied Carrot Curls

Ingredients

  • 2 units carrots, peeled
  • 1 cup water
  • 1 cup granulated sugar
  • to taste units additional sugar for sprinkling

Instructions

  1. Preheat the oven to 225°F.
  2. Line a rimmed baking sheet with parchment paper and coat it with nonstick spray.
  3. Using a vegetable peeler, shave off 15 to 20 long strips of carrot, ideally 1-inch wide.
  4. In a medium saucepan, combine 1 cup of water and 1 cup of sugar, and bring to a boil.
  5. Add the carrot strips to the boiling mixture, reduce heat to medium-low, and simmer for 15 minutes.
  6. Drain the carrot strips and let them cool for about 5 minutes.
  7. Arrange the carrot strips in a single layer on the prepared baking sheet without touching each other.
  8. Bake the carrot strips for about 30 minutes until they look translucent and slightly dry.
  9. Once cool enough to handle but still warm, wrap each carrot strip around the handle of a wooden spoon to form a curl.
  10. Gently slide the curl off the handle back onto the paper and sprinkle with sugar.
  11. Let the curls sit at room temperature until completely dry, about 30 minutes.
