Ingredients

The salmon and berries

  • 1 lb Sockeye salmon
  • ½ cup California Giant blueberries
  • ½ cup diced California Giant strawberries

The sauce

  • ½ cup BBQ sauce
  • ¼ cup blueberry jelly
  • 1 Tbsp white balsamic vinegar
  • to taste Salt & black pepper

For garnish

  • additional berries

Instructions

  1. Preheat the oven to 425°F and grease a foil-lined baking sheet.
  2. Chop the strawberries and mix them with the blueberries, BBQ sauce, blueberry jelly, and vinegar in a bowl.
  3. Place the salmon skin side down on the baking sheet and season with salt and pepper.
  4. Spread the berry sauce mixture evenly over the salmon.
  5. Bake for about 12 minutes or until the salmon reaches an internal temperature of 145°F.
  6. Garnish with additional berries and serve with a veggie and grain of your choice.
