Ingredients

The cake

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup Greek yogurt
  • ½ cup oil
  • 2 large eggs
  • 1 tablespoon vanilla powder or extract
  • 3-4 medium ripe bananas
  • 1 cup chocolate chips
  • 1 cup pecan pieces or walnuts

The crumb topping

  • ¾ cup flour
  • ¾ cup sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons butter
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 10-inch springform pan.
  2. Mix all dry ingredients for the cake in one bowl.
  3. In another bowl, lightly beat the eggs, then add Greek yogurt and oil, mixing until well blended.
  4. Mash the bananas to a puree and mix them into the wet ingredients.
  5. Combine the wet and dry mixtures, stirring just enough to blend without overmixing.
  6. Fold in the pecans and chocolate chips gently.
  7. Pour the batter into the prepared springform pan.
  8. For the crumb topping, mix flour, sugar, and cinnamon in a bowl, then work in softened butter until crumbly.
  9. If the mixture is too dry, add milk and refrigerate for 15 minutes.
  10. Top the cake batter with the crumb mixture.
  11. Bake for 25-30 minutes, then cool for 5 minutes before removing the springform pan.
  12. Allow the cake to cool for at least 20 minutes before serving.
