Ingredients

The cake

  • 1 Tablespoon all-purpose flour (for coating the pan)
  • 2 cups all-purpose flour (spooned & leveled)
  • 1 cup granulated sugar
  • 2 Tablespoons granulated sugar
  • 1 teaspoon salt
  • 10 Tablespoons unsalted butter (firm and cold)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup buttermilk (at room temperature)
  • 1 large egg (at room temperature)
  • 2 teaspoons pure vanilla extract

The crumb topping

  • 2/3 cup packed light or dark brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch springform pan.
  2. In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Reserve 1 cup of the crumb mixture for topping and refrigerate it.
  4. Mix baking powder and baking soda into the remaining crumb mixture, then add buttermilk, egg, and vanilla. Beat until smooth.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Combine the reserved crumb mixture with brown sugar and cinnamon, then sprinkle it over the batter.
  7. Bake for 45-55 minutes, checking for doneness with a toothpick.
  8. Cool for 10 minutes before removing from the pan, and let it cool completely before serving.
