Ingredients

Homemade Cajun Seasoning

  • 2 tablespoons smoked paprika
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • ½ tablespoon chili powder
  • 1 teaspoon light brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Seafood Boil

  • 2 lbs. jumbo shrimp, deveined, tail-on, shell-on
  • 4 tablespoons butter
  • 1 large yellow onion, diced
  • 6 large garlic cloves, smashed and roughly chopped
  • ½ teaspoon salt, or more to taste
  • 1 lb. andouille sausage, sliced
  • ½ cup dry white wine
  • 10-14 cups beef broth (or seafood broth)
  • 15 oz. canned diced tomatoes
  • teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 large lemon, sliced
  • 1.5 lbs. Yukon gold potatoes, quartered
  • 4 fresh lobster tails
  • 6 ears corn, sliced into fourths

Butter Sauce

  • ½ cup fresh parsley
  • ¼ cup unsalted butter
  • 1 large lemon, juiced

Instructions

  1. Prepare the cajun seasoning by combining all spices in a small bowl.
  2. Rinse the shrimp under cold water, pat dry, and sprinkle with cajun seasoning, letting it rest.
  3. Melt butter in a large stockpot over medium/high heat, then add onion, garlic, salt, and sliced sausage, sautéing for 3-4 minutes.
  4. Deglaze the pot with white wine, then add beef broth, diced tomatoes, remaining cajun seasoning, ground coriander, and garlic powder.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  6. After simmering, increase heat and add half of the sliced lemon.
  7. Add potatoes and boil for 7 minutes, then add lobster tails and boil for 4 more minutes.
  8. Add corn and boil for another 5 minutes, then add shrimp and remaining sausage, boiling for 3 more minutes.
  9. Prepare the butter sauce by chopping parsley, melting butter, and mixing with lemon juice.
  10. Remove everything from the broth using a slotted spoon and place in a serving dish, then pour butter sauce over and toss.
