The chicken

  • 8 pieces bone-in, skin-on chicken thighs

The glaze

  • ¼ cup coconut oil or butter, melted
  • 3 tablespoons stone ground mustard
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • ½ teaspoon dried sage
  • ½ teaspoon sea salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. In a small mixing bowl, combine melted coconut oil, mustard, balsamic vinegar, black pepper, salt, thyme, and sage.
  3. Place chicken thighs on an oven-safe dish and brush the mustard mixture evenly over each one.
  4. Bake for 45 minutes or until the internal temperature of the chicken reaches 165°F.
