Grilled Veggie Skewers with Magic Green Sauce

Instructions
- Preheat the grill or oven to medium/high broil.
- Chop the sweet potato and baby potatoes, then boil them for about 10 minutes until semi-tender.
- Drain the potatoes and let them cool slightly.
- Assemble the skewers by layering the vegetables, leaving space at the ends for flipping.
- Brush the skewers with oil and sprinkle with salt and pepper.
- Grill or broil the skewers for 10-15 minutes, flipping halfway through.
- Prepare the Magic Green Sauce or BBQ sauce while the vegetables are cooking.
- Serve the skewers with the sauce, best when fresh.
