Grilled Veggie Skewers with Magic Green Sauce

Ingredients

Vegetables

  • 1 large sweet potato
  • 4-6 whole baby red potatoes
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium red onion
  • 2 large portobello mushrooms
  • 2-4 ears corn (optional)

For brushing

  • 1-2 Tbsp avocado or coconut oil
  • 1 pinch sea salt
  • 1 pinch black pepper

For serving

  • optional Magic Green Sauce or BBQ sauce

Instructions

  1. Preheat the grill or oven to medium/high broil.
  2. Chop the sweet potato and baby potatoes, then boil them for about 10 minutes until semi-tender.
  3. Drain the potatoes and let them cool slightly.
  4. Assemble the skewers by layering the vegetables, leaving space at the ends for flipping.
  5. Brush the skewers with oil and sprinkle with salt and pepper.
  6. Grill or broil the skewers for 10-15 minutes, flipping halfway through.
  7. Prepare the Magic Green Sauce or BBQ sauce while the vegetables are cooking.
  8. Serve the skewers with the sauce, best when fresh.
