Mushroom and Onion Naan Pizzas

Ingredients

The base

  • 4-6 pieces naan

The toppings

  • ¼ cup butter or plant-based butter
  • 1 small white onion, finely chopped
  • 2 cups sliced white mushrooms
  • ¾ cup ricotta cheese or dairy-free ricotta
  • cup shredded mozzarella cheese or dairy-free mozzarella
  • 2 tablespoons honey (omit if vegan)
  • to taste salt & pepper
  • to taste fresh or dried sage for topping

Instructions

  1. Preheat the oven to 425°F.
  2. Line up 4 naan on a baking sheet, using a second sheet if necessary.
  3. In a skillet over medium heat, melt the butter.
  4. Add the chopped onions, seasoning with salt and pepper, and sauté until softened.
  5. Stir in the honey and mushrooms, cooking until mushrooms shrink and onions caramelize, about 5 minutes.
  6. Remove from heat and set aside.
  7. Spread ricotta evenly over each naan.
  8. Distribute the onion and mushroom mixture on top of the ricotta.
  9. Sprinkle mozzarella evenly over the pizzas.
  10. Bake for 10-12 minutes until the sides are browned and the cheese is melted.
  11. Sprinkle with sage, cut into pieces if desired, and enjoy.
