Vegan Mushroom and Caramelized Onion Naan Pizzas

Ingredients

The toppings

  • ½ cup sliced red onion
  • ½ cup sliced mushrooms
  • 2 tablespoons nutritional yeast
  • 1 teaspoon dried thyme
  • ½ teaspoon dried crushed rosemary
  • to taste crushed red pepper
  • Salt and pepper to taste

The base

  • 2 pieces vegan naan flatbreads
  • 4-6 tablespoons tomato sauce or marinara sauce

The cooking ingredients

  • 2 tablespoons grapeseed oil
  • 1 teaspoon sugar (or coconut sugar)
  • 1 teaspoon balsamic vinegar

Instructions

  1. Heat oil in a skillet over medium heat, add onions, cover, and cook until translucent and tender for 10-15 minutes.
  2. Preheat oven to 400º F and prepare a baking sheet.
  3. Stir sugar and balsamic vinegar into skillet with onions, add mushrooms, stir, and cook for an additional 2-3 minutes.
  4. Remove from heat and set aside.
  5. Place naan flatbreads on the baking sheet and spread with 2-3 tablespoons of sauce for each flatbread.
  6. Divide the onion and mushroom mixture and remaining ingredients between the pizzas, spreading equally on top.
  7. Cook in the oven until hot and flatbreads are golden brown, about 10 minutes.
  8. Cut into slices before serving and sprinkle with additional nutritional yeast or parmesan and crushed red pepper if desired.
