Ingredients

The granola base

  • 3 cups gluten-free oats
  • 1 cup large coconut flakes, unsweetened
  • 1 cup slivered almonds
  • 1 cup chopped pecans

The sweetener and oil

  • ½ cup brown rice syrup or maple syrup
  • cup coconut oil

The spices

  • 2 tsp cinnamon
  • 1 tsp ginger
  • ½ tsp cloves
  • ½ tsp cardamom

The flavoring

  • 2 tsp pure vanilla extract
  • 1 pinch sea salt

The dried fruit

  • ¾ cup dried plums, chopped or dried fruit of choice (raisins or cranberries)

Instructions

  1. Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the oats, coconut flakes, almonds, and pecans.
  3. In a small saucepan over medium heat, combine the brown rice syrup, coconut oil, and spices, stirring until warm.
  4. Remove from heat and stir in the vanilla extract.
  5. Add the syrup mixture to the oat mixture and stir until evenly coated, then transfer to the baking sheet.
  6. Bake for 20 minutes, stirring halfway through until golden brown.
  7. Allow to cool for 10-15 minutes before mixing in the dried plums or other dried fruit.
  8. Serve with milk, yogurt, or enjoy on its own. Store in an airtight container for up to 3 weeks.
