Vanilla Chai Spiced Granola

dried plums, chopped or dried fruit of choice (raisins or cranberries)
Instructions
- Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.
- In a large bowl, combine the oats, coconut flakes, almonds, and pecans.
- In a small saucepan over medium heat, combine the brown rice syrup, coconut oil, and spices, stirring until warm.
- Remove from heat and stir in the vanilla extract.
- Add the syrup mixture to the oat mixture and stir until evenly coated, then transfer to the baking sheet.
- Bake for 20 minutes, stirring halfway through until golden brown.
- Allow to cool for 10-15 minutes before mixing in the dried plums or other dried fruit.
- Serve with milk, yogurt, or enjoy on its own. Store in an airtight container for up to 3 weeks.
