Chai-Spiced Granola

Ingredients

The granola base

  • ½ cup honey or agave
  • 2 tablespoons coconut oil
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 4 cups old-fashioned oats
  • 2 cups nuts (almonds and pecans)
  • 1 cup shredded coconut
  • chai spice mix (see below)

Chai spice mix

  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground ginger
  • ¼ teaspoon allspice
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 300°F and line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together the warmed honey, melted coconut oil, vanilla, and almond extracts.
  3. In a large bowl, combine oats, nuts, shredded coconut, and chai spice mix.
  4. Add the honey mixture to the dry ingredients and mix until everything is well coated.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20 minutes, stirring halfway through for even cooking.
  7. Continue baking for an additional 5-10 minutes until the nuts are toasted.
  8. Remove from the oven and let cool on a wire rack before storing in a sealed container.
