Ingredients

The potatoes

  • 1 pound russet potatoes

The seasoning and oil

  • 22 tablespoons avocado oil
  • 1 teaspoon cornstarch
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic salt
  • ½ teaspoon freshly ground black pepper
  • to taste flakey salt

Instructions

  1. Scrub the potatoes and cut them in half lengthwise, then into quarters, making wedges about ½” thick.
  2. Soak the potato wedges in warm water for at least 10 minutes.
  3. Drain the potatoes and dry them well.
  4. Place the potatoes in a bowl and drizzle with avocado oil.
  5. Add cornstarch, rosemary, garlic salt, and pepper, then toss to coat.
  6. Preheat the air fryer to 350°F and arrange the potatoes in a single layer.
  7. Cook for 10 minutes, stirring occasionally.
  8. Increase the heat to 400°F and cook for an additional 10 to 15 minutes until crisp and golden brown.
  9. Sprinkle with flakey salt and serve warm.
