Paleo Blueberry Banana Muffins

Ingredients

  • 4 medium bananas
  • 3 large eggs
  • ¼ cup almond flour
  • ½ cup coconut flour
  • ¼ cup melted coconut oil
  • ½ cup nut butter of choice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup fresh blueberries
  • a pinch sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Line a muffin pan with liners for 8 large muffins or 16 medium muffins.
  3. In a blender, combine bananas, eggs, nut butter, and melted coconut oil, and pulse until blended.
  4. Transfer the batter to a bowl and mix in the dry ingredients.
  5. Gently fold in the blueberries.
  6. Scoop the batter into the muffin cups and sprinkle additional blueberries on top.
  7. Bake for 20-25 minutes for large muffins or 15-17 minutes for smaller muffins, until a toothpick comes out clean.
