Instructions
- Chill the meat in the freezer for 30 minutes to an hour before starting.
- In a large bowl, combine the ground pork, ground beef, broccoli, garlic, parsley, salt, pepper, smoked paprika, Dijon mustard, garlic powder, and onion powder, mixing until just incorporated.
- Grind the meat mixture using a meat grinder, then mix in the crumbled bacon.
- Prepare the hog casing on the sausage stuffing tube, leaving 5-6 inches hanging.
- Stuff the casing with the meat mixture, shaping it and pushing back any air bubbles.
- Tie a knot at both ends of the sausage and twist into links.
- Place the finished sausages in the fridge uncovered to dry out before cutting into individual sausages.
