Ingredients

Hibiscus Strawberry Quick-Jam

  • ½ cup boiling water
  • cup dried hibiscus flowers
  • 1 pound strawberries, hulled
  • ½ cup sugar
  • a pinch salt
  • Juice from ½ lime

Cheese Danishes

  • 1 large egg
  • 8 ounces cream cheese, at room temperature
  • 2 tablespoons sugar
  • ¼ cup jam
  • Double batch rough puff pastry

Glaze (optional)

  • 1 cup powdered sugar
  • a pinch salt
  • 1 to 2 tablespoons milk

Instructions

  1. Prepare the Hibiscus Strawberry Quick-Jam by steeping hibiscus flowers in boiling water for 10 minutes, then strain.
  2. Blend the hibiscus tea with hulled strawberries until smooth.
  3. In a pot, combine the strawberry mixture with sugar and salt, simmer for 20 minutes, and then add lime juice before cooling.
  4. For the Cheese Danishes, whisk together egg, cream cheese, sugar, and jam until smooth.
  5. Roll out the puff pastry and cut into 4-inch squares, then shape into triangles.
  6. Fill the center of each triangle with the cream cheese mixture and a dollop of jam.
  7. Chill the assembled danishes in the freezer for 15 minutes before baking.
  8. Bake at 375°F for 20-30 minutes until golden brown.
  9. Prepare the glaze by whisking together powdered sugar, salt, and milk until smooth, then drizzle over cooled danishes.
