Instructions
- Line the Instant Pot with bacon and sauté until crispy.
- Slice the pork roast into three equal pieces and tuck garlic cloves into the slits if using.
- Sprinkle the salt evenly over the pork pieces.
- Place the salted pork on top of the bacon in the Instant Pot.
- Pour in the water and cover the pot.
- Set the Instant Pot to cook for 90 minutes under high pressure.
- Once cooking is complete, allow the pressure to release naturally for 15 minutes.
- Check the pork for tenderness; if not tender, cook for an additional 5-10 minutes under pressure.
- Transfer the pork to a bowl and taste the cooking liquid, adjusting seasoning if necessary.
- Add cabbage wedges to the cooking liquid and cook under high pressure for 1-5 minutes.
- Shred the pork and serve with the cooked cabbage.
