Ingredients

The meat

  • 5 pounds bone-in pork shoulder roast
  • 3 slices bacon
  • 5 cloves garlic (optional)

The seasoning

  • tablespoons Red Alaea Hawaiian Coarse Sea Salt
  • ~1 tablespoon Red Alaea Hawaiian fine sea salt (if coarse is unavailable)

The vegetables

  • 1 cup water
  • 1 head cabbage (cored and cut into 6 wedges)

Instructions

  1. Line the Instant Pot with bacon and sauté until crispy.
  2. Slice the pork roast into three equal pieces and tuck garlic cloves into the slits if using.
  3. Sprinkle the salt evenly over the pork pieces.
  4. Place the salted pork on top of the bacon in the Instant Pot.
  5. Pour in the water and cover the pot.
  6. Set the Instant Pot to cook for 90 minutes under high pressure.
  7. Once cooking is complete, allow the pressure to release naturally for 15 minutes.
  8. Check the pork for tenderness; if not tender, cook for an additional 5-10 minutes under pressure.
  9. Transfer the pork to a bowl and taste the cooking liquid, adjusting seasoning if necessary.
  10. Add cabbage wedges to the cooking liquid and cook under high pressure for 1-5 minutes.
  11. Shred the pork and serve with the cooked cabbage.
