Ingredients

The meat

  • 5 pounds Pork shoulder roast

The seasoning

  • tablespoons Alaea Red Hawaiian Coarse Sea Salt
  • 3 slices Bacon
  • 5 cloves Garlic (optional)

Instructions

  1. Line a slow cooker with 3 slices of bacon.
  2. If desired, remove the skin from the roast.
  3. Weigh the pork to estimate the amount of salt needed.
  4. Use about ¾ teaspoon of medium-coarse salt for every 1 pound of meat.
  5. Cut slits into the meat and tuck in the garlic cloves.
  6. Salt the pork all over and place it on top of the bacon in the slow cooker, skin-side up.
  7. Cover and cook on low for about 16 hours (or 9-12 hours for newer slow cookers).
  8. Do not add any liquid while cooking.
  9. Once cooked, remove the meat and shred it with two forks.
  10. Adjust seasoning with the cooking liquid from the pot.
