Low Carb Spinach Artichoke Dip

Instructions
- Mince the shallot and garlic, and squeeze the thawed spinach dry and chop it.
- In a large frying pan over medium heat, sauté the shallot and garlic in oil until softened.
- Add the cream cheese and heavy cream, whisking until melted and creamy.
- Stir in the sour cream, mayonnaise, Parmesan, mozzarella, and feta until melted and bubbling.
- Add the dry sherry and let it bubble until the alcohol smell dissipates, then add the red wine vinegar.
- Fold in the spinach and artichoke hearts, and heat until warmed through. Serve as desired.
