Instructions
- Grind the sesame seeds in a mortar.
- Mix in the sugar, soy sauce, and sesame seed oil to create the dressing.
- Wash the Shungiku and trim the stems if necessary, cutting them into 5 cm pieces.
- Blanch the Shungiku in boiling water for 30 seconds for the leaves and 1 minute for the stems.
- Transfer the Shungiku to icy cold water to stop the cooking process.
- Squeeze out excess water and cut the leaves if they are long.
- Toss the Shungiku with the dressing and serve immediately.
