Instructions
- Blanch the spinach and green beans, then squeeze out excess moisture.
- Grind the sesame seeds in a mortar until crushed but still textured.
- Mix in sugar, soy sauce, and dashi with the ground sesame seeds.
- Add the prepared spinach to the sesame dressing and toss well.
- For the green beans, parboil for 2 minutes, cool, and toss with the dressing.
- Prepare the burdock roots by scrubbing, boiling with vinegar for 5 minutes, and tossing with the dressing.
