Ingredients

Goma ae dressing

  • 3 tbsp sesame seeds
  • ½ tbsp sugar
  • ½ tbsp soy sauce
  • ½ tbsp dashi

Vegetables

  • 200 g spinach
  • 1 tsp soy sauce
  • 200 g green beans
  • 200 g Japanese mustard spinach
  • 1 tsp soy sauce
  • 200 g burdock roots
  • 1 tsp vinegar

Instructions

  1. Blanch the spinach and green beans, then squeeze out excess moisture.
  2. Grind the sesame seeds in a mortar until crushed but still textured.
  3. Mix in sugar, soy sauce, and dashi with the ground sesame seeds.
  4. Add the prepared spinach to the sesame dressing and toss well.
  5. For the green beans, parboil for 2 minutes, cool, and toss with the dressing.
  6. Prepare the burdock roots by scrubbing, boiling with vinegar for 5 minutes, and tossing with the dressing.
