Ingredients

The egg mixture

  • 4 pieces eggs
  • ½ cup egg whites
  • 1 cup frozen spinach, drained
  • 1 cup red onion, chopped
  • 1 ½ green pepper, chopped
  • to taste salt
  • to taste pepper

The filling

  • 2 pieces chicken sausage, cooked and sliced

For cooking

  • 1 cup water

Instructions

  1. 1. Whisk together the eggs, egg whites, drained spinach, salt, and pepper in a bowl.
  2. 2. Add water to the Instant Pot and place the trivet inside.
  3. 3. Spoon the egg mixture into a baby-food container with compartments.
  4. 4. Top each compartment with chopped peppers, onions, and chicken sausage.
  5. 5. Cover the container and place it in the Instant Pot.
  6. 6. Seal the lid and set the Instant Pot to the Steam setting for 12 minutes.
  7. 7. Allow the steam to naturally release for 10 minutes before opening the pot.
  8. 8. Carefully remove the container and let the egg bites cool slightly before serving.
