Instructions
- Preheat the oven to 375°F.
- Boil water in a pot and add cauliflower florets, cooking until fork tender.
- Drain the cauliflower and set aside.
- In the same pot, combine heavy cream, 1 cup of cheddar cheese, mozzarella, and cream cheese, stirring until melted.
- Add garlic powder, mustard powder, and salt to the cheese sauce, adjusting seasoning to taste.
- Mix the cauliflower with the cheese sauce and transfer to a baking dish.
- Melt butter in a bowl and mix with crushed pork rinds and parmesan.
- Sprinkle remaining cheddar cheese over the cauliflower, then top with the pork rind mixture.
- Bake for 18 to 20 minutes until the cheese is melted and topping is golden brown.
- Let stand for 3 to 5 minutes before serving.
