Kale & Peanut Coleslaw

Ingredients

The salad

  • 6 cups thinly sliced cabbage
  • 3 cups kale, chopped
  • 4 scallions thinly sliced
  • ½ cup parsley, chopped
  • ¼ cup peanuts

The dressing

  • ½ tsp minced ginger
  • 1 clove garlic
  • ¼ cup extra virgin olive oil
  • 2 tbsp rice wine vinegar
  • Juice from ½ lime
  • 1 tbsp water
  • 1 tsp honey
  • 2 tbsp cilantro
  • 1 scallion
  • Pinch salt

Instructions

  1. Combine ginger, garlic, honey, water, olive oil, vinegar, cilantro, scallion, and salt in a food processor to make the dressing.
  2. Pulse until well combined.
  3. In a large bowl, mix cabbage, kale, scallions, and parsley.
  4. Pour ⅔ cup of the dressing over the salad and mix well.
  5. Sprinkle peanuts on top and enjoy.
