Kale & Peanut Coleslaw

The dressing

Instructions
- Combine ginger, garlic, honey, water, olive oil, vinegar, cilantro, scallion, and salt in a food processor to make the dressing.
- Pulse until well combined.
- In a large bowl, mix cabbage, kale, scallions, and parsley.
- Pour ⅔ cup of the dressing over the salad and mix well.
- Sprinkle peanuts on top and enjoy.
