Ingredients

The slaw

  • 2 cups shredded kale
  • 2 cups shredded carrots
  • 2 cups shredded purple/red cabbage

The dressing

  • ΒΌ cup apple cider vinegar
  • 1 tablespoon raw cane sugar
  • to taste sea salt
  • to taste ground black pepper
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Rinse, dry, and shred all of the vegetables.
  2. Combine the shredded vegetables in a large mixing bowl with the remaining ingredients.
  3. Toss everything to coat and season to taste.
  4. Let the slaw sit for up to an hour to allow the flavors to meld before serving.
