15-Minute Kale Apple Slaw

Ingredients

Salad Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Slaw

  • 1 bunch kale
  • 1 tablespoon extra virgin olive oil
  • 2 cups thinly sliced red cabbage
  • 2 medium carrots, grated
  • 2 medium apples, peeled and cut into matchsticks

Instructions

  1. Combine the dressing ingredients in a jar or blender and mix well.
  2. Remove the stems from the kale and slice the leaves into ¼ inch pieces.
  3. In a large bowl, massage the kale with olive oil and a pinch of salt for 3 to 5 minutes until softened.
  4. Add the red cabbage, grated carrots, and apple to the kale.
  5. Drizzle the dressing over the slaw and toss everything to combine.
