The slaw

Instructions
- Prepare the dressing by whisking together the apple cider vinegar, lime juice, maple syrup or honey, olive oil, salt, and pepper in a medium bowl.
- Add the thinly sliced red onion to the dressing and let it soak for 10 to 15 minutes.
- In a large bowl, combine the chopped kale, chopped apples, and shredded carrots.
- Add the soaked red onion and dressing to the large bowl, and stir to combine evenly.
- Taste the slaw and adjust the seasoning with more oil, vinegar, or honey if desired.
- Cover the slaw and let it sit for at least 30 minutes to allow the flavors to meld.
- Refrigerate until ready to serve, preferably within an hour of making.
