Ingredients

The dressing

  • 2 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp pure maple syrup or honey
  • ¼ tsp salt
  • ¼ tsp pepper

The slaw

  • 2 oz thinly sliced red onion
  • 4 oz finely chopped kale
  • 1 medium carrot, shredded
  • 1 medium apple, cored and chopped

Instructions

  1. Prepare the dressing by whisking together the apple cider vinegar, lime juice, maple syrup or honey, olive oil, salt, and pepper in a medium bowl.
  2. Add the thinly sliced red onion to the dressing and let it soak for 10 to 15 minutes.
  3. In a large bowl, combine the chopped kale, chopped apples, and shredded carrots.
  4. Add the soaked red onion and dressing to the large bowl, and stir to combine evenly.
  5. Taste the slaw and adjust the seasoning with more oil, vinegar, or honey if desired.
  6. Cover the slaw and let it sit for at least 30 minutes to allow the flavors to meld.
  7. Refrigerate until ready to serve, preferably within an hour of making.
