Lime & Blistered Peanut Coleslaw

The dressing

freshly squeezed lime juice

The peanuts

unsalted raw peanuts
Instructions
- Roast the peanuts in a skillet or oven at 350°F for 5 to 10 minutes until golden and blistered.
- Cut the cabbage into quarters, remove the core, and shred it into thin slices. Combine with tomatoes, jalapeno, and cilantro in a bowl.
- In a separate bowl, mix lime juice, olive oil, and salt. Adjust sweetness with honey if needed.
- Combine the dressing with the cabbage mixture and stir gently. Fold in the roasted peanuts just before serving.
