Ingredients

The coleslaw

  • ½ of a medium-large cabbage
  • 1 basket tiny cherry tomatoes
  • 1 whole jalapeno chile
  • ¾ cup cilantro

The dressing

  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • ¼ teaspoon fine-grain sea salt
  • honey to taste

The peanuts

  • cups unsalted raw peanuts

Instructions

  1. Roast the peanuts in a skillet or oven at 350°F for 5 to 10 minutes until golden and blistered.
  2. Cut the cabbage into quarters, remove the core, and shred it into thin slices. Combine with tomatoes, jalapeno, and cilantro in a bowl.
  3. In a separate bowl, mix lime juice, olive oil, and salt. Adjust sweetness with honey if needed.
  4. Combine the dressing with the cabbage mixture and stir gently. Fold in the roasted peanuts just before serving.
