Instructions
- Prepare the peanut butter lime dressing by blending peanut butter, garlic, ginger, lime zest, lime juice, agave nectar, cumin, salt, and pepper in a food processor.
- Add ice water gradually while blending until the dressing reaches a creamy consistency. Adjust seasoning if needed.
- Boil the corn in a pot of water for about 8-10 minutes until tender, then grill the corn for 6-7 minutes until charred.
- In a large bowl, combine shredded cabbage, carrot ribbons, sliced red bell pepper, green onions, and mint.
- Cut the charred corn kernels off the cobs and add them to the bowl with the vegetables.
- Pour the peanut butter lime dressing over the slaw, season with salt and pepper, and toss to combine.
- Garnish with chopped peanuts, green onions, and mint before serving.
