Instructions
- Wash and dry the peppers, then set aside.
- Heat a large cast iron skillet over high heat.
- In a small bowl, whisk together the vinegar, mayonnaise, sugar, mustard, salt, and pepper.
- When the skillet is hot, char the peppers on all sides for about 5 minutes.
- While the peppers are charring, combine the coleslaw mix and chopped green onions in a bowl.
- Once the peppers are charred, carefully remove them from the pan, cut off the tops and seeds, and slice them.
- Add the charred peppers to the coleslaw mixture and toss with the dressing.
- Allow the slaw to stand for at least 10 minutes before serving, adjusting seasoning with salt and pepper as needed.
