Charred Pepper Slaw

Ingredients

The slaw

  • 1 large red bell pepper
  • 1 large orange bell pepper
  • 1 large yellow bell pepper
  • 1 16-ounce package coleslaw mix
  • 4 large green onions

The dressing

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons mayonnaise
  • 2 teaspoons sugar
  • 2 teaspoons whole grain mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly coarse-ground black pepper

Optional ingredients

  • to taste chopped fresh mango
  • to taste chopped fresh pineapple
  • 1 minced jalapeño pepper

Instructions

  1. Wash and dry the peppers, then set aside.
  2. Heat a large cast iron skillet over high heat.
  3. In a small bowl, whisk together the vinegar, mayonnaise, sugar, mustard, salt, and pepper.
  4. When the skillet is hot, char the peppers on all sides for about 5 minutes.
  5. While the peppers are charring, combine the coleslaw mix and chopped green onions in a bowl.
  6. Once the peppers are charred, carefully remove them from the pan, cut off the tops and seeds, and slice them.
  7. Add the charred peppers to the coleslaw mixture and toss with the dressing.
  8. Allow the slaw to stand for at least 10 minutes before serving, adjusting seasoning with salt and pepper as needed.
