Sweet & Tangy Bell Pepper Slaw

Ingredients

The slaw

  • 3 pieces bell peppers (red, orange, yellow)
  • 14 oz coleslaw mix or shredded cabbage
  • ½ small red onion

The vinaigrette

  • cup red wine vinegar
  • ¼ cup olive oil
  • tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp Italian seasoning

Instructions

  1. 1. Slice the bell peppers and red onion very thinly using a sharp knife or mandolin slicer.
  2. 2. In a small bowl, whisk together the red wine vinegar, olive oil, honey, Dijon mustard, salt, black pepper, and Italian seasoning.
  3. 3. In a large bowl, combine the sliced bell peppers, coleslaw mix, and red onion.
  4. 4. Pour the vinaigrette over the veggie mixture and toss gently until combined. Adjust seasoning to taste.
