Instructions
- 1. Slice the bell peppers and red onion very thinly using a sharp knife or mandolin slicer.
- 2. In a small bowl, whisk together the red wine vinegar, olive oil, honey, Dijon mustard, salt, black pepper, and Italian seasoning.
- 3. In a large bowl, combine the sliced bell peppers, coleslaw mix, and red onion.
- 4. Pour the vinaigrette over the veggie mixture and toss gently until combined. Adjust seasoning to taste.
