Instructions
- Preheat the oven to 350°F and spray a loaf pan with nonstick cooking spray.
- In a mixing bowl, combine the ground beef, crushed tortilla chips, diced onion, cumin, cayenne pepper, beaten eggs, and ¼ cup of salsa.
- Mix the ingredients thoroughly and transfer the mixture to the prepared loaf pan, spreading it evenly.
- Bake for 30 minutes, then remove from the oven and spread the remaining salsa on top.
- Return the meatloaf to the oven and bake for an additional 35 minutes, checking that the internal temperature reaches 160°F.
- Let the meatloaf cool for 10 minutes before slicing and serving, optionally topping with shredded cheese.
