Mexican Meatloaf

Ingredients

The meat mixture

  • 1 pound ground beef
  • 1 pound chorizo
  • 1 medium red bell pepper, diced
  • ½ medium white onion, minced
  • 1 7-ounce can diced green chiles
  • 2 cloves garlic, minced
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • ½ tablespoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 1 cup blanched almond flour
  • 1 large egg
  • ½ cup fresh cilantro, roughly chopped

The sauce

  • 2 cups salsa of choice

Instructions

  1. Preheat the oven to 350°F and grease a 9 by 5-inch loaf pan.
  2. In a large bowl, combine all the meat mixture ingredients except for the salsa.
  3. Press the mixture firmly into the prepared loaf pan and pour 1 cup of salsa on top.
  4. Bake for 1 hour 15 minutes, until the meat is fully cooked.
  5. Remove from the oven, top with the remaining salsa, and garnish with extra cilantro.
