fresh cilantro, roughly chopped
The sauce
Instructions
- Preheat the oven to 350°F and grease a 9 by 5-inch loaf pan.
- In a large bowl, combine all the meat mixture ingredients except for the salsa.
- Press the mixture firmly into the prepared loaf pan and pour 1 cup of salsa on top.
- Bake for 1 hour 15 minutes, until the meat is fully cooked.
- Remove from the oven, top with the remaining salsa, and garnish with extra cilantro.
