Easy Mexican Taco Meatloaf

Ingredients

The meatloaf

  • 2 lbs ground beef
  • 2 large eggs
  • 1 jar salsa (16 oz jar)
  • 2 tbsp ghee or other cooking oil

The seasoning

  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp sea salt
  • ½ tsp pepper
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F and grease a loaf pan with ghee or oil.
  2. Mix all the seasoning ingredients in a small bowl.
  3. In a large bowl, combine the ground beef, half of the salsa, eggs, and the seasoning mix, and mix well.
  4. Form the mixture into a loaf shape in the loaf pan and pour the remaining salsa on top.
  5. Bake in the oven for 80-90 minutes, or until the internal temperature reaches 160°F.
  6. Allow to cool for at least 5 minutes before slicing and serving.
