Ingredients

The salad

  • 8–10 ounces brussel sprouts, shaved or shredded
  • ¼ cup finely sliced onion
  • 1 clove garlic, finely minced
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • 1 small lemon zest
  • ¼–½ cup Everyday Tahini Sauce
  • ½ teaspoon sumac
  • ¼ cup pistachios
  • ¼ cup fresh chopped parsley

Optional garnishes

  • to taste avocado
  • to taste sunflower sprouts
  • to taste aleppo chili flakes
  • to taste zaatar spice
  • to taste dukkah

Instructions

  1. Thinly slice or shred the brussel sprouts and place them in a large bowl.
  2. Drizzle with olive oil, sprinkle with garlic, salt, and lemon zest, then massage the mixture for about 3 minutes until tender.
  3. Add the onion and tahini dressing, tossing well and adjusting the amount of dressing to your preference.
  4. Taste and add more salt and lemon juice as needed.
  5. Toss in the pistachios and fresh parsley, then sprinkle with sumac.
  6. Garnish with optional ingredients like sunflower sprouts, chili flakes, zaatar, dukkah, and sliced avocado.
