Creamy Pasta with Sausage & Mustard Seeds

uncooked wheat pasta shells
The sauce

extra virgin olive oil

hot Italian turkey or chicken sausage, casings removed

fresh baby spinach, chopped

dry white wine

fat free half and half

super grainy mustard

crushed red pepper flakes

thinly sliced or chopped fresh basil
Instructions
- Cook the pasta in salted water according to package instructions, then drain and set aside.
- While the water is boiling, heat the olive oil in a large skillet over medium-high heat.
- Add the sausage and cook for about five minutes, breaking it up as it cooks, until fully cooked.
- Stir in the fresh spinach and cook for another minute until it wilts.
- Add the wine to the skillet and reduce the heat to a simmer, cooking for about five minutes until the wine is reduced by half.
- Stir in the half and half, mustard, and crushed red pepper, and simmer for another two minutes.
- Remove from heat and stir in the reserved pasta and basil until well combined.
- Serve the dish warm.
