Instructions
- Preheat the oven to 325°F and grease two 8x8 inch baking dishes.
- Whisk the eggs in a large mixing bowl.
- Grind the Cream of Buckwheat in a dry blender until it resembles flour.
- Add the ground buckwheat and dry ingredients to the eggs.
- Add the melted coconut oil last to prevent it from hardening.
- Mix until well combined and spread evenly in the baking dishes.
- Bake for about 25 minutes, checking at 22 minutes, until the tops are golden.
- Allow to cool on the counter, then refrigerate for a few hours before slicing into 18 bars.
