Ingredients

  • 4 eggs whisked eggs
  • 13 oz Cream of Buckwheat, ground
  • ½ cup arrowroot flour
  • ½ cup coconut flour
  • teaspoons baking soda
  • teaspoons fine sea salt
  • 1 cup dairy-free organic dark chocolate chips
  • 1 tablespoon vanilla extract
  • 1 teaspoon vanilla extract
  • 1 cup honey
  • ½ cup melted coconut oil

Instructions

  1. Preheat the oven to 325°F and grease two 8x8 inch baking dishes.
  2. Whisk the eggs in a large mixing bowl.
  3. Grind the Cream of Buckwheat in a dry blender until it resembles flour.
  4. Add the ground buckwheat and dry ingredients to the eggs.
  5. Add the melted coconut oil last to prevent it from hardening.
  6. Mix until well combined and spread evenly in the baking dishes.
  7. Bake for about 25 minutes, checking at 22 minutes, until the tops are golden.
  8. Allow to cool on the counter, then refrigerate for a few hours before slicing into 18 bars.
