Ingredients

Wet Ingredients

  • 1 cup all-natural creamy cashew butter
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • cup light brown sugar or coconut sugar
  • 3 tablespoons coconut flour
  • 1 teaspoon baking soda
  • a pinch salt
  • ½ cup dark chocolate chips
  • to taste coarse sea salt for topping

Instructions

  1. Preheat the oven to 350°F and spray an 8-inch x 8-inch baking dish with nonstick cooking spray.
  2. Combine all ingredients in a large mixing bowl and mix until combined, aiming for a consistency a little thinner than cookie dough.
  3. Transfer the batter to the baking dish and spread it out evenly.
  4. Optionally, sprinkle additional chocolate chips on top.
  5. Bake for 16-19 minutes, until the edges turn golden brown.
  6. Let cool for at least 20 minutes, then sprinkle with sea salt if desired and slice into squares.
