Instructions
- 1. Preheat the oven to 350°F and prepare an 8x8 inch baking dish with cooking spray and parchment paper.
- 2. In a large mixing bowl, combine cashew butter, oat flour, egg, maple syrup, vanilla extract, salt, and baking soda until well mixed.
- 3. Gently fold in the diced mango.
- 4. Spoon the thick batter into the prepared baking dish using a rubber spatula.
- 5. Bake for approximately 28 minutes.
- 6. Allow the pan to cool on a cooling rack for 30 minutes before removing the blondies to cool completely.
