Ingredients

  • 1 cup creamy cashew butter
  • 1 cup oat flour
  • 1 large egg
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp fine sea salt
  • ½ tsp baking soda
  • ½ cup mango, diced small

Instructions

  1. 1. Preheat the oven to 350°F and prepare an 8x8 inch baking dish with cooking spray and parchment paper.
  2. 2. In a large mixing bowl, combine cashew butter, oat flour, egg, maple syrup, vanilla extract, salt, and baking soda until well mixed.
  3. 3. Gently fold in the diced mango.
  4. 4. Spoon the thick batter into the prepared baking dish using a rubber spatula.
  5. 5. Bake for approximately 28 minutes.
  6. 6. Allow the pan to cool on a cooling rack for 30 minutes before removing the blondies to cool completely.
