Instructions

  2. 2. As the butter melts, the solids will rise to the top and the water will sink to the bottom.
  3. 3. Once melted, skim the milk solids from the top using a ladle or slotted spoon.
  4. 4. Transfer the butterfat to a clean saucepan or bowl, leaving the water in the bottom of the original saucepan.
