Instructions
- Start with slightly cool or room-temperature cream.
- Pour cream into a blender or food processor and blend on low, increasing to medium-high until it forms whipped cream.
- If using a Vitamix, use the tamper to push the whipped cream down into the blades.
- Blend on high until the cream becomes clumpy and the butter separates from the buttermilk.
- Pour the mixture into a fine-mesh colander placed over a bowl to drain the buttermilk.
- Rinse the butter under cold running water until the water runs clear.
- Press the butter together to form a ball and remove excess buttermilk.
- Add salt or other flavorings to taste, then shape and store the butter.
