  • 1 quart heavy cream

Optional Ingredients

  • to taste salt
  • to taste fresh or dried herbs
  • to taste minced garlic
  • to taste honey
  • to taste spices
  • to taste fruit

Instructions

  1. Start with slightly cool or room-temperature cream.
  2. Pour cream into a blender or food processor and blend on low, increasing to medium-high until it forms whipped cream.
  3. If using a Vitamix, use the tamper to push the whipped cream down into the blades.
  4. Blend on high until the cream becomes clumpy and the butter separates from the buttermilk.
  5. Pour the mixture into a fine-mesh colander placed over a bowl to drain the buttermilk.
  6. Rinse the butter under cold running water until the water runs clear.
  7. Press the butter together to form a ball and remove excess buttermilk.
  8. Add salt or other flavorings to taste, then shape and store the butter.
