Ingredients

  • 1 or 2 pounds unsalted butter

Instructions

  1. Cut the butter into roughly one-inch squares.
  2. Melt the butter over medium heat, stirring gently from time to time.
  3. Watch for a thick, white foam to form at the surface.
  4. Once it starts to simmer, reduce the heat to medium-low.
  5. Let the butter simmer for about 5 minutes without stirring.
  6. Observe the foam becoming thinner and the bubbles increasing in size.
  7. Scrape the sides of the pan occasionally to help milk solids sink.
  8. As the milk solids sink, the butter will become clearer and more translucent.
  9. Watch for the butter to take on a golden color as the solids brown.
  10. When the butter foams for a second time, remove it from the heat.
  11. Let the foam settle for a few seconds.
  12. Line a sieve with cheesecloth and pour the ghee into a bowl or jar.
  13. Discard the milk solids left in the sieve.
  14. Cover the jars loosely and let the ghee set at room temperature.
