Instructions

  1. 1. Heat the butter in a medium, heavy-bottomed pot over medium-low or low heat.
  2. 2. Check every 10 minutes, skimming the foam that rises to the surface.
  3. 3. Continue cooking until the milk solids drop to the bottom and turn deep golden brown.
  4. 4. Turn off the heat and let cool for 3 minutes.
  5. 5. Strain the mixture using two layers of cheesecloth over a strainer into a clean jar.
  6. 6. Pour the strained ghee into a clean, sealable jar and store it.
